Every morning when I drive home from work, I pass by the local donut shop. They have a double chocolate donut that’s absolutely delicious… and also super full of sugar, gluten, and dairy. While I’m not against the occasional treat, I also feel better when I choose healthy options. These double chocolate dairy-free muffins are also gluten-free, protein rich, and make my belly (and my tastebuds) happy.
My family also loves these and honestly they taste better than what you’ll find at the store. The secret ingredient that makes them so moist and delicious? Mayonaisse!
Dairy Free Chocolate Muffin Ingredients
Some muffin recipes are too dry and some incorporate sour cream or yogurt to make them moist. Since I wanted these to be dairy-free, I opted for mayo instead. Mayo is essentially oil, egg, and a little vinegar… ingredients that go great in baked goods. It makes the muffin a little denser but still moist and fluffy.
To give them some more protein, which helps stabilize blood sugar, I also added collagen powder. You can omit it if you don’t have any, but I found it doesn’t affect the texture and gives them added health benefits. Collagen powder is great for supporting healthy skin, hair, and nails, among other things.
I also used a gluten-free flour blend for these dairy-free chocolate muffins. Lately, I’ve had great results using Bob’s Red Mill gluten-free flour blend, but you can use whatever you have. If you don’t need gluten-free, then wheat flour will also work.
Double Chocolate Muffins
These dairy-free chocolate muffins are great on their own with just the cocoa powder, but there are few things that really amp up the flavor. I added some dark chocolate chips to the batter for a hit of gooey chocolate. Be sure to opt for dairy-free if you’re staying away from milk products. There are plenty of allergen-friendly brands now, but I’ve also found that some store brands of dark chocolate chips naturally do not contain dairy and are cheaper.
Try adding a teaspoon of espresso powder to further enhance the chocolate flavor. You don’t really taste the coffee this way, but it adds another layer of flavor.
We like eating muffins with some coffee (and raw milk for the kids), and a side of eggs for more healthy fats and protein. They also make a delicious dessert. They’re mildly sweet so it’s not an overwhelming sugar hit in the morning, but they’re still a nice treat. It’s also great for those busy mornings when you need to grab something and head out the door.
Dairy Free Double Chocolate Muffins
Ingredients
- 2 cups flour (I used gluten-free)
- ¾ cup cane sugar
- ½ cup cocoa powder
- 1 tsp baking powder
- ½ tsp salt
- 2 eggs
- ½ cup mayonnaise
- ¼ cup avocado oil (or olive oil)
- ¼ cup water
- ¾ cup canned coconut milk
- 1 tsp vanilla
- 1 cup dairy free chocolate chips
Instructions
- Preheat the oven to 350 F. Grease a muffin pan or line it with paper or silicone liners.
- Combine all of the dry ingredients together in a mixing bowl.
- Whisk together the wet ingredients in a separate bowl. If your coconut milk is a little hard, you can blend the wet ingredients in your blender to better incorporate them.
- Add the dry ingredients to the wet and stir just until combined. Mix in the chocolate chips.
- Pour the muffin batter into your pan and bake for about 20 minutes. Bake just until a toothpick inserted in the middle comes out clean. If you use a regular size muffin pan, not jumbo muffins, then reduce the bake time to about 15 minutes.
- Allow the muffins to cool in the pan on a wire rack for a few minutes before removing. If you take them out too early, they’ll fall apart.
Notes
You can make these in whatever size muffin pan you’d like. Just be sure to increase/decrease the cook time depending on your pan size.
Store any leftovers in an airtight container for up to several days. They don’t last that long in our house! I have not tried freezing these, but I imagine they’d freeze well. Just be sure to thaw them at room temperature before eating.
