I’m more of a cookie dough girl, hence these dark chocolate salted cookie dough truffles, but sometimes you need cookies. These coconut flour jam thumbprint cookies are a healthy sweet treat that I can feel good giving to my kiddos.
Jam Thumbprint Cookie Inspiration
Last Saturday I got an unexpected phone call from my old friend Holly. She and her husband have been living in another state for the past few years so I was surprised when she asked if we wanted to come over. Right now. They had moved back and were living 15 minutes away!
The weather was really bad and my hubby spent over an hour shoveling out the driveway. The snow plow had conveniently dumped all the snow from the surrounding 5 blocks (at least) onto our car.
This gave me plenty of time to whip up a couple batches of cookies. These coconut flour jam thumbprint cookies are grain-free, naturally sweetened and downright delicious.
Tips for Making these Jam Thumbprint Cookies
Unlike most jam thumbprint cookies these don’t spread, so I flatten the dough balls with my palm before making an indent in the center. They’re also more likely to crumble than wheat flour cookies, so don’t beat them up too much.
Ingredients
- 1/2 cup Coconut flour
- 3 Eggs
- 1/3 cup Butter
- 2 Tbsp Honey
- 1 and 1/2 tsp Almond extract
- 1/8 tsp Sea salt
- Jelly, Jam or Fruit butter of choice
Instructions
- Preheat oven to 350
- Pulse all ingredients, except for jelly, in a food processor until a ball of dough forms. If you're not using a food processor, use room temperature butter and mash the ingredients in with a fork.
- Roll a golf ball size piece of dough between your palms and place the ball on a parchment lined baking sheet. Repeat until all of the dough is used. These don't spread so they can be placed closely together.
- Using your index finger (unless you have abnormally tiny thumbs!) make an indent in the centers. Use your hand to gently flatten all the cookies.
- Bake until the edges just start to brown. These can overbake quickly!
- Once cooled, fill with your choice of filling.
- Tip: For even more coconut flavor, roll the dough balls in coconut flakes before flattening.

I made these, I loved the almond flavor and easy recipe. I couldn’t find a bake time listed in the recipe so I monitored closely and pulled them out around 15 minutes. They were crumbly but not crunchy, and delicious with the jam filling. However, the next morning they were soggy and the jam filling had bled all over the cookie. I had to throw the rest away 🙁
That’s such a bummer they got soggy on you! I’ll admit that I never had them last longer than one day because we always ate them fast.
