Trying to find hummus at the store is difficult, at least in every store I’ve been in. Once I finally found some though, I was shocked when I found out organic hummus was selling for about $1 an ounce! This easy sundried tomato and garlic hummus is a snap to whip up, and you won’t even miss the store bought versions.
What makes this so good?
So I have a confession. For the longest time I had no idea that chick peas also masqueraded under the name garbanzo beans. Once I figured this out though, (thanks to a cleverly labeled can of Bush’s Best beans), I dived headfirst into hummus making. My first attempts were pretty lackluster and even though they were healthy, they didn’t have much flavor. I’ve come a long way with my hummus making skills though, and this recipe is one of our favorites.
This recipe is much cheaper, healthier and oh so yummy. Eat it with tortilla chips, carrot sticks or enjoy it with a veggie wrap. The smoked paprika gives this a subtle, almost bacon flavor, while the sundried tomatoes give a burst of concentrated tomato flavor. Feel free to use roasted garlic if you have some on hand, but I find it tastes just as good with the raw garlic.
Olive oil wannabes
A note about the olive oil in this recipe. Out of 186 extra virgin olive oil brand that were tested, about 70% of them failed. Meaning, most of the olive oil out there is fake and diluted with cheaper oils or adulterated in some way, yet they can taste the same as the “real thing.” You can read about it here. Easy sundried tomato and garlic hummus
Ingredients
- 1 can chickpeas (aka garbanzo beans) – get it here
- 1/2 tsp peppercorns – get it here
- 1 tsp unrefined sea salt or to taste – get it here
- 1 tsp smoked paprika – get it here
- 3 T. sesame tahini – get it here
- 1/2 to 1 clove garlic
- 3T. sundried tomatoes in oil
- 1/4 cup olive oil – get the real stuff here
Directions
- Combine all ingredients in food processor.
- Add some water if the mixture is too thick and won’t blend well.
- Process until smooth and serve with veggies or chips.
