Mint Chocolate Chip Ice Cream (Semi-Raw, Dairy free)

     When I was pregnant I remember searching through the small town of Rochester at 3 in the morning for a carton of mint chocolate chip ice cream. I finally found a gas station that had a measly offering of Ben and Jerry’s for $5 a pint. Hungry pregnant lady that I was, I splurged.

     Not only was this treat expensive, it was also incredibly bad for my health! The following recipe uses coconut milk for a base and is sweetened only with raw honey. Even the chocolate chips are good for you!
     I’ve found that buying regular premium ice cream at the store isn’t worth it. The image on the carton promises it’s loaded with caramel, chocolate and nuts, but when you open it, you feel like you need a search party to find these things.
    Almond and coconut milk ice cream in the health food section is healthier for you, but it’s still sweetened with sugar and contains thickeners and stabilizers like guar gum, locust bean gum and carob bean gum. I’m sure any ice cream craving you have is accompanied by a hankering for some locust bean gum, Mmmm… not so much. And it can sell for around $6 a pint! That’s even more expensive than my late night gas station run.
    So what’s a person to do? Why, I’m glad you asked. Make your own!! If you have an ice cream machine it literally takes minutes to assemble and combine your ingredients and in less than an hour you have delicious ice cream. Even if you don’t have a machine, this recipe is worth it. Modifications are included if you are not using a machine.
